Just Real Quick…
…An easy and quick recipe that I made up last night. Now, don’t go thinking I’m some sort of genius- it’s super easy. I’m not one for creating my own extravagent recipes. I am more a quick, simple, and natural girl.
Anway, here it is:
5 chicken thighs (with bone and skin)
2 cloves garlic (sliced)
hand ful of basil (chopped)
1/2 yellow onion (diced)
1 tsp fresh rosemary (chopped fine)
1 cup chicken broth
2 cups carrots (diced)
salt
pepper
Set oven at 400 degrees.
Place chicken in roasting pan, sprinkle with salt and pepper, distribute onion evenly over chicken and pan, place garlic, basil and rosemary over chicken. Pour chicken broth and carrots into pan.
Cover with foil and cook for about an hour.
Take foil off and cook for another 10-15 minutes.
Serve with Rice.
It was so so good. Even though I peel all the skin off when it’s done cooking I think it gives great flavor.
